How to: Yang Chow Fried Rice
- 5 cups cooked rice (see instructions)
- 3 tablespoons oil
- 2 large eggs, beaten
- 4 ounces fresh shrimp (40-60 size), deveined and shells removed
- 1 medium onion, finely diced
- 1/2 cup (about 4 ounces) Virginia ham, cut into cubes
- 3/4 cup frozen peas, thawed
- 1 1/2 teaspoons salt
- ¼ teaspoon sugar
- 2 scallions, finely chopped
- 1/8 teaspoon white pepper
