■ Ingredients:
Cookie dough
・ Butter… 100g
・ Honey ... 80g
・ Flour ... 280g
・ Black cocoa powder ... 10g
mousse
・ Milk ... 80ml
・ White chocolate ... 160g
・ Fresh cream ... 300ml
Matcha glacage
・ Water: 75ml
・ Sugar ... 75g
・ Condensed milk ... 100g
・ Glass gelatin ... 10g
・ Matcha chocolate… 175g
Chocolate glacage
・ Water: 75ml
・ Sugar ... 75g
・ Condensed milk ... 100g
・ Glass gelatin ... 10g
・ Chocolate ... 175g
・ Matcha cream: appropriate amount
・ Chocolate cream: appropriate amount

■ Preparation
·Cookie dough
1. Add honey to room temp butter and mix until smooth, then add the flour and mix.
2. Separate 80g of 1 and add cocoa powder to make a black dough.

·mousse
1. Dissolve chocolate in boiling milk, mix fresh cream made in 7 minutes, pour into a mold, cool in a freezer and harden.

・ Glacage
1. Boil water, sugar and condensed milk in a pan and add powdered gelatin to dissolve.
2. Add green tea chocolate and chocolate and mix until smooth.

■ Steps
1. Roll out the cookie dough, roll the cocoa dough by hand and sparsely place it. Cover with a cooking sheet and roll with a rolling pin.
