Brown Macarons
· Egg white ... 50g
· Sugar ... 15g
· Almond Powder ... 60g
· Powdered sugar ... 100 g

· Silver dragees ... appropriate amount
· Ganache of your choice ... Appropriate amount

■ Steps
1. Sift the almond powder and powder sugar together.
2. Beat egg whites at high speed until they turn white with a mixer. Put half of the sugar in it and beat it until thickened. Add remaining sugar and coloring to make a firm meringue
3. Add 1 to the meringue of 2 and mix it with the spatula until the powder disappears
4. Press 3 with a spatula against the bowl by gently stroking. Continue this macaronage until glossy finish and softens slightly
5. Squeeze out in the shape of ice cream and place dragees. Dry until the dough does not stick even if you touch the surface with your fingers
6. Preheat oven to 160 degrees. Put 5 in, lower it to 140 degrees and bake for 15 minutes. Make sure the dough does not move even if you touch it with your fingers. If the dough moves, bake it for some more time.
7. Keep in the oven until cooled
8. Completed with your choice of ganache
